Here are some great tips for cooking a roast from one of the best poker playing chefs around, Astin!
One For The Elf: "Love Elf asked if I had any tips for prime rib. While I'm far from an expert, here are my tips:
- Make sure the roast is at ROOM TEMPERATURE before cooking it. Take it out an hour before you plan to cook. This is so it cooks evenly. Don't worry, it's not chicken, it'll be fine.
- Get a digital roasting thermometer. The kind where you leave the probe in the meat and the readout attached by a wire and kept outside the oven. They're accurate, and you won't have to open the oven at all during the roasting (which is death for a roast). One of the best kitchen gadgets I own.

We will officially be having the largest number of guests over for a single dinner on Christmas Eve, even taking a nice dinner to another one of our friends while he gets a meager dinner break in between jobs that day. Stephanie and I are celebrating Christmas ourselves that day anyway as we're heading up I95 to visit some of her relatives in Philadelphia for the actual holiday so we decided to invite some friends over that don't have any family locally but are staying home for the holidays.
I think we've got the details worked out. It's just going to take a little bit of rearranging around the dinner table as we've only got 6 chairs and there's going to be 7 of us eating. So today it's going to be getting the grocery store and laundry out of the way. Tomorrow will be the cleaning!

Well the Christmas Party Season has officially been kicked off! My company held a little get together for our customers today. It was nice, food was good, drinks started flowing at noon..... really nothing to complain about! Jason came over when he got out of work and met a few more of my work peeps and got some grub. Needless to say I didn't have to cook dinner after our party grazing!
Tomorrow is party number two which is a customer party which I will "enjoy" so much........
Sat night will be a fund one though. It's friends of ours who are hosting and the whole crew will be there. The best part is the fact that our commute is 5 stories up in our high rise! More to report later. Jason has a work party tomorrow as well but he's off so he won't be going to that one but he has another one Tuesday next week.
